Restaurant Reality with Chef Mavro

West Hawaii culinary students Dan Cody and Alyssa Tokumura participated in the two-day Restaurant Reality experience with Chef Mavro.  The students were accompanied by their Chef Instructor Paul Heerlein and participated in tours of United Fishing Agency’s Fish Auction hosted by Foundation Advisory Board member Brooks Takenaka; Fresh Island Fish and Sumida Watercress Farm.

The students worked in the Chef Mavro kitchen and also learned about front of house service.  Restaurant Reality is sponsored by the Hawaii Culinary Education Foundation and Chef Mavro Restaurant and is designed to give students a behind-the-scenes experience working in a fine dining restaurant.  Chef Mavro hosted the students and their instructor for a 13-course dinner.  Students from Kauai, Kapiolani, Leeward, and Maui have participated in the experience.
